I'm not going to lie, I laid into this box once I got home last night! Something about the salsa verde recipe called my name, I have never made one before and I love a good salsa so it was go time.

I love that every box of Pacific Northwest Fresh comes with not only a break-down of what's in the box, sometimes I have no idea what certain items are but also a recipe with most if not all the ingredients included!

The ingredients you will need for salsa verde

5-6 tomatillos husked

1 jalapeno, stem removed before or after roasting

2/3 cup chopped onion (rinse under water to remove the harsh bite)

1/4 cup chopped cilantro

1 clove minced garlic

1/2 tsp salt (more to taste)

1/2 - 1 tsp sugar (more to taste)

1 Tbsp fresh lime juice

3 Tbsp water, more if desired

Instructions:

Move the oven rack to 4-inches below the top of your oven and broil the jalapeno plus tomatillos for 4-5 minutes, flip and cook for another 4 minutes watching to make sure they don't burst.

While this is happening you can chop up your sweet onion, mince your garlic and get the cilantro ready.

Take all the juice from the pan and add that to your food processor along with the the rest of the veggies, lime juice, salt, sugar and water. Depending on how hot you want your salsa verde you can deseed the jalapeno or leave them.

Blend enough to mix but leave chunks if you like. Either way the color is so bright and beautiful, fresh and delicious.
