
Mantra on a Monday: National Eat What You Want Day
My latest box of Pacific Northwest Fresh produce had me pumped about rhubarb.
I've grown up around it, loved the color but never dug in so once I saw it on top I already knew where I wanted to start. I'd been waiting to try a recipe for candied rhubarb that I'd seen a while back and that's when things got really interesting.
Ingredients for candied rhubarb
- 1-2 stocks of rhubarb
- 1 cup of sugar
clean and slice thin. Soak in sugar water for 10-15 then bake in the oven 10 minutes at 100 and check for a tacky texture. Curl if you wish and let set
For Rhubarb Banana Bread
- Flour
- three bananas
- two eggs
- cinnamon
- all-spice
- one cup rhubarb
- baking soda
- baking powder
- salt
