A Secret Menu Item in Toppenish That’s So Good, You Have to Ask for By Name

This menu item is so secret, it's off the menu and you have to call ahead to see if it's even available. I got to try it today, and wow, was I impressed. Don't let the innocent-looking pastel color of the sauce fool you--it has a spicy kick to it, kinda just like salsa verde.

I learned about the secret menu item from my dear friend Brenda. She told me over bites of chicken satay that she had met the owners of Papanana when she and her husband lived near the Puget Sound. After moving to Toppenish a year or two ago, they stopped by the restaurant one day while getting to know the town. When they walked inside, they were shocked to see familiar faces!

If you are a person who does not do well with spicy food, I recommend you don't order this one. The secret menu item is called "Mark's Sauce." It is a green sauce that has a very spicy kick, but it is sooooo good!

On a spice level between 1 to 5, I'd give it a 4.9! Fortunately, I was able to quench my thirst from the heat with just a few swigs of ice cold water. The spiciness quickly went away, and I was able to try another bite. I scooped a spoonful to put in my to-go box so that I could eat the rest later for leftovers.
