My wife was in Tri-Cities over the weekend and brought back some french macarons for me. These aren't the fluffy, coconut macaroon cookies that are usually called macaroons but these are a light, flavorful, delicate cookie I was fascinated with for years. It got me thinking that we should have a specialty shop that sells these in Yakima.

Now, to be fair, Essencia Bakery in downtown Yakima has had these in their store before and they are wonderful! I'm a huge fan. Not sure if they always have them or maybe it depends on the head baker's mood, I'm not sure. But I'd love if they had and marketed these delightful cookies. I'm not sure exactly what it is about them, but I can't get enough of them.

What do they taste like? What makes them so great? I wish I knew the answers to all of these. They come in a variety of flavors from basic vanilla to more fancy flavors like salted caramel, espresso, apple pie and more always in bright, vibrant colors. The cookies, themselves, are delicious, too, with usually a cream filling and sometimes more like the apple pie ones might have some apple butter or jam in there as well.

So, if you're a baker and thinking about starting a business in Yakima, might be worth your while to start a company that sells these French macarons. My wife bought a 12-pack (photoed) and paid near $25 at a store in Kennewick for them so there's money to be had.
