Seems fitting that I would be writing Tales From the Scale using the above goodbye nachos as my topic today!

As you can see Oct. 1 of 2017 my husband and I made epic nachos to say goodbye, as I began a health journey that would CHANGE my life!

I weighed 232 at the time, but that weight actually felt pretty good because I had reached 260 before so I was winning, right? Eh!

My energy level was nonexistent, my stomach was always hurting me and my knees and back were starting to really feel the extra pounds.

Emotional eating has always been my go-to in the past and so a hard stop of all that I LOVED seemed like the only way to do it. But denying yourself all the things you love can be dangerous as well, so where do we find the happy medium?

Finding healthy versions of the foods that we know and LOVE! Cutting calories while taking time to make your food not only taste good but look good with bright colored veggies and doing fancy things like roasting them before adding them to your meal will give extra layers of yumminess that are just too good not to continue.

I noticed with not as many calories to consume I had A LOT more free time so I spent a lot of time making my plates look pretty, cutting veggies fancier and trying new things.

A go-to meal of mine that I had COMPLETELY forgotten about was one my sister-in-law introduced to me with quinoa, basically a healthier version of nachos!

Nom! Nom! Nom!

Make your own pico de gallo, black beans instead of refried and turkey instead of ground beef will all help cut calories while keeping you fuller longer and helping with the dreaded belly fat! Switch the usual white rice for brown or quinoa and pay attention to how much cheese you put on top. Those calories add up, but this will taste SO good you might not even miss nachos.

With the football right around the corner, you could put your quinoa on the stove and get to pickin' your Pro Football Pick 'Em teams! Wouldn't an extra $10,000 in your pocket be nice? You have until kickoff on Thursday to get in there! :)

Lastly, the Tale From the Scale after two weeks goes like this ... 186.2! I have successfully gained six pounds in two weeks! DANG IT! Vacation this summer has been very good but hey! You can't figure out where you're going if you don't acknowledge where you are at!
