It's the time of year where a warm and comforting soup is the perfect answer to a chilly day! This recipe works well with any squash you come across but acorn squash was used when I found the original recipe, from the actress Tia Mowrey. She enjoys a vegan version that is incredible and over the years I have discovered it turns out well anyway you slice it, depending on the veggies you have available!
Ingredients
  • One acorn squash
  • One onion or two
  • Carrots
  • Celery
  • Garlic
  • One or two knuckles of ginger
  • Bay leaves
  • Chicken stock
  • Salt
  • Pepper
  • Garlic powder
  • Onion powder
  • Olive oil
  • Heavy whipping cream

Instructions

Wash ingredients and cut the acorn squash in half. Scoop out filling and set the seeds aside to cook or throw out. On a baking tray or in a Dutch oven add the squash, peeled onion, peeled ginger, peeled garlic, celery, peeled carrots, and bay leaves. Drizzle with olive oil and sprinkle with salt and pepper. Cover Dutch oven or add the tray to the oven preheated to 350 for one hour.
Take out of the oven and use tongs and a spoon or ice cream scoop to scrape acorn squash meat out, throw out skin and add chicken stock, enough to cover veggies, and let simmer. Remove bay leaves and use a blender to smooth into a soup. Pour back into the pot or Dutch oven and add your garlic powder, onion powder, salt, and pepper to taste and a bit of heavy whipping cream.
Serve with fresh chopped parsley, paprika, and a drizzle of olive oil or some chopped green onion. My favorite sandwich with it is grilled prosciutto, pear, and brie sandwich for dipping!
