I love spinach and I love smoothies, but I would never thing to put them together. But that thought apparently never passed through the mind of Tim Lantrip, owner of Sundance Espresso in Selah, WA. With a local item this weird, I can't help myself to be interested in it so I had to see, and taste, it for myself.

When I arrived there were already 3 cars in line and two people waiting at the walk-up window. One of the people in line was even there to get one of these 'spinach banana smoothies' as he had tried them before and loved them. When I asked why he decided to make these for the public, he stated that many who are dieting wanted an alternative. He also has a son who's a Type 1 Diabetic so this was a great drink that even his son could enjoy.

The recipe is simple enough and gladly shared it with us.

  • 1½ cups of spinach
  • 1 whole banana
  • 1 scoop of sweetner (they use an all natural sweetner)
  • ½ cup of water with ice

Sure, you can try to make this at home, but I wouldn't recommend it. They have a buff blender that makes the smoothest smoothie I've ever tried. Despite it's melted crayon color (probably Forest Green in the Crayola box) I couldn't taste the spinach at all. Not that I wanted to, but it tasted like a good banana smoothie that happen to have a cup and a half of spinach. This is perfect if you have kids who don't want to eat their veggies. Tim said 16 ounces of spinach banana smoothie can account for your full daily serving of vegetables, but you should still eat more.
